Honestly I threw it together last time &amp;amp; thought it'd be iffy... very pleasantly surprised! Amounts very subjective here... going off my memory and I'm sure they'll change. I measured nothing last time and doubt I will next time either.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;1 package goat meat (cubed or cut in chunks)&lt;br /&gt;1 to 2 tbsp Butter (Ghee? Haven't tried it that way, but sure it'd be great)&lt;br /&gt;Curry Powder&lt;br /&gt;2 cups Brown Rice&lt;br /&gt;2 cans Cream of Mushroom Soup&lt;br /&gt;Water (Milk?)&lt;br /&gt;Salt &amp;amp; Pepper to taste? (don't think I used pepper)&lt;br /&gt;&lt;br /&gt;Preheat oven - I'll be honest again &amp;amp; say I dont remember what temp (will adjust this when I figure it out lol).  It really depends on your pan and stuff too... if you put it at a lower temp make sure you adjust your cooktime accordingly. I think I had mine between 350 and 400 though.&lt;br /&gt;&lt;br /&gt;Melt butter in pan over medium heat, add curry powder and stir a few times before adding in thawed goat meat. Brown on both sides.&lt;br /&gt;&lt;br /&gt;Pour rice in a casserole dish (I said two cups but I just made sure there was a good even amount across the bottom of the dish) and place browned goat meat on top. Top with cream of mushroom soup and use cans to add in water. Should be about double the amount of rice you used or so. When we do chicken casseroles we substitute some of the water for milk and I don't remember if I did this with here too... I may have. Something to experiment with either way. Cook all together for about 5 -10 &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_7"&gt;minutes&lt;/span&gt;.Place mixture in greased &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_8"&gt;casserole&lt;/span&gt; dish, add a layer of cheese, then top with mashed potatoes, and top with cheese. This is a standby cookbook for me. I get a lot of my meals out of this cookbook .&lt;br /&gt;&lt;br /&gt;Fruit Juice Jelly:&lt;br /&gt;&lt;br /&gt;Because this jelly starts with fruit juice, it goes together quickly and easily, yet has the great taste of homemade jelly. You can &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;substitute&lt;/span&gt; other juices than the ones recommended for a &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_2"&gt;variety&lt;/span&gt; of juices.&lt;br /&gt;&lt;br /&gt;4 cups of fruit juice ( Cranberry, &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_3"&gt;unsweetened&lt;/span&gt; apple, &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_4"&gt;orange&lt;/span&gt;, or grape)&lt;br /&gt;1/4 cup lemon juice&lt;br /&gt;1pkg of 1.75oz  pectin regular powdered&lt;br /&gt;4 1/2 cups of sugar&lt;br /&gt;&lt;br /&gt;1. Pour desired juice and lemon juice into a 6-8 heavy kettle ( I used my big  sauce pan/stew pot) Sprinkle with pectin. Let stand for 1 -2 minutes, stir to &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_5"&gt;dissolve&lt;/span&gt;. Bring to boil over med-high heat stirring &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_6"&gt;frequently&lt;/span&gt;, add sugar. Return to rolling boil Boil hard for 1 minute. Remove from heat; quickly skim off foam with a metal spoon.&lt;br /&gt;2. &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_7"&gt;Ladle&lt;/span&gt; at once into hot, &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_8"&gt;sterilized&lt;/span&gt; canning jars ( I used 8oz jars), leaving 1/4 inch of &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_9"&gt;headspace&lt;/span&gt;. Wipe jar rims and adjust lids. Process in a &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_10"&gt;boiling&lt;/span&gt; water &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_11"&gt;canner&lt;/span&gt; for 5 &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_12"&gt;mins&lt;/span&gt; ( basically a pan full of hot boiling water - the pectin package will have directions how get the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_13"&gt;canner&lt;/span&gt; together...you do not need a specialized pan) start the timer when the water gets to a boil. Remove jars and let cool until set. I found it online (and is linked to one of my MPM pages). Is an Irish dish that we originally tried for St. Patricks Day week and fell in love with. &lt;br /&gt;&lt;br /&gt;1 ounce butter, margerine or bacon fat (I did not measure it this last time... just threw a chunk in and it worked fine)&lt;br /&gt;1 onion finely chopped&lt;br /&gt;1 lb potatoes cooked and mashed (I added milk and butter while doing so)&lt;br /&gt;8 ounces boiled cabbage (I never measure)&lt;br /&gt;Ground beef or lamb optional (I've never had it without)&lt;br /&gt;&lt;br /&gt;My additional ingredients - &lt;br /&gt;Salt&lt;br /&gt;Pepper&lt;br /&gt;Garlic&lt;br /&gt;&lt;br /&gt;Melt butter in a large frying pan (seriously needs to be the biggest you've got), add the onion (and garlic if using it) and fry for a few minutes until softened, stirring frequently. Add the potatoes and cabbage. Add meat if using it. I add salt &amp; pepper at this point. Fry over medium heat for about 15 minutes until brown and then serve. &lt;br /&gt;&lt;br /&gt;Additional info - To make things easier on me... I brown the meat in the pan after softening the onions and then add potatoes and cabbage to that. Everyone loved it and is easy to adjust/tweak.&lt;br /&gt;&lt;br /&gt;1 cup uncooked brown rice&lt;br /&gt;1 cup dried lentils&lt;br /&gt;1 32 oz container of vegetable broth&lt;br /&gt;1 8 oz package shredded cheddar cheese (1 cup if doing yourself)&lt;br /&gt;1 cup copped onion optional&lt;br /&gt;salt and garlic powder to taste&lt;br /&gt;&lt;br /&gt;Pre heat oven to 350 degrees.&lt;br /&gt;Coat casserole dish with cooking spray. Combine all ingredients in a mixing bowl. Stir well. This is the website where I found the basics for this soup.  &lt;a href="http://www.frenchonionsoups.com/"&gt;http://www.frenchonionsoups.com/&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;yields&lt;/span&gt; about 12 1 cup servings.&lt;br /&gt;&lt;br /&gt;4-6 lg Red Onions&lt;br /&gt;2/3 cup Dry White Wine&lt;br /&gt;2 Bay Leaves&lt;br /&gt;Handful of &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_2"&gt;Rosemary&lt;/span&gt;&lt;br /&gt;Handful of Thyme&lt;br /&gt;1/4 cup of Sugar&lt;br /&gt;3-4 Cloves of Garlic diced&lt;br /&gt;8 cups of Beef Stock&lt;br /&gt;4 cups of Water&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_3"&gt;Saute&lt;/span&gt;' the onions in a skillet half way through add the garlic, and sugar. This whole process is going to take about 30 &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_4"&gt;mins&lt;/span&gt;. The sugar with help &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_5"&gt;caramelize&lt;/span&gt; the onion.&lt;br /&gt;&lt;br /&gt;In a big stew pot add the beef stock, water, white wine, and the rest of the &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_6"&gt;ingredients&lt;/span&gt;. Then add the onions mixture. Stir &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_7"&gt;consistently&lt;/span&gt;. I had no idea how this was going to turn out...they are quick and yummy&lt;br /&gt;&lt;br /&gt;1 can of &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;crescent&lt;/span&gt; rolls&lt;br /&gt;1 small purple onion diced&lt;br /&gt;1/4 cup green bell pepper diced&lt;br /&gt;16 oz whipped cream cheese&lt;br /&gt;1/4 cup of &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;shredded&lt;/span&gt; cheese&lt;br /&gt;1 can of tuna&lt;br /&gt;&lt;br /&gt;Follow directions on the &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_2"&gt;crescent&lt;/span&gt; rolls, wait to roll them up until the filling is prepared.&lt;br /&gt;Mix all of the other ingredients in a small bowl. Is not possible on here right now though. Is a great little site though!&lt;br /&gt;&lt;br /&gt;1 cup shortening&lt;br /&gt;1 cup raisins&lt;br /&gt;3/4 cup sugar&lt;br /&gt;3/4 cup brown sugar&lt;br /&gt;2 eggs&lt;br /&gt;1 1/2 cups whole wheat flour&lt;br /&gt;1 tsp salt&lt;br /&gt;1/2 tsp cinnamon&lt;br /&gt;1/2 tsp cardammom&lt;br /&gt;1 tsp baking soda&lt;br /&gt;2 cups rolled oats&lt;br /&gt;&lt;br /&gt;Boil raisins for 5 min.&lt;br /&gt;&lt;br /&gt;While raisins are boiling, mix together shortening with the two kinds of sugar. &lt;br /&gt;&lt;br /&gt;Next add in other ingredients and mix again. I did after every ingredient or two was added just to make that easier. &lt;br /&gt;&lt;br /&gt;Drop on to cookie sheet. These do not do well with dropping off a spoon, so I got my hands dirty and shaped them myself. It worked well... However, I did not grease it (recipe did not call for it) and regretted that later.
